Intense and delicate. And very easy to make.
The main thing is to use a good chocolate. Valrhona is my choice.
Then, you can play around with ingredients: chopped almonds or hazelnuts, chocolate chips, a piece of candied orange or ginger in the middle….

Ingredients (for around 30 truffles)
- 200gr. Dark Chocolate (70%).
- 175ml. Fresh Cream.
- 10gr. Butter.
- 40ml. Dark Rum.
- Cocoa Powder.
- Pink Peppercorns.
- Maldon Salt.
Preparation
Put in a pot the cream and bring it to boil at low heat.
Add the chocolate in pieces and stir until melts completely. Add the butter and Rum and mix well. Transfer to a tray, cover with cling film and place in the fridge for at least 3 hours (better overnight).
Mix in a bowl the Cocoa Powder, the crushed pink peppercorns and a some Maldon Salt.
With a tea spoon take a small quantity of the truffle mix (the size of a hazelnut will do). Shape it with your fingers and batter in the Cocoa Powder bowl. Repeat the process…
Put your truffles in a plate and back to the fridge for at least 2 hours.
Perfect company for a good coffee…
