Probably my favourite dessert…
Ingredients
- 240 gr. rice, Bomba or Arborio.
- 2 litres whole fresh milk.
- 400 ml. coconut milk.
- 2 cinnamon sticks.
- The peel of a mandarin.
- The peel of half lemon.
- A vanilla pod, opened in half (to release the seeds).
- 8 table spoons white sugar.
- Cinnamon powder.
Preparation
Using a sifter wash the rice under cold water for a couple of minutes and reserve. This will reduce the starch on the rice and will make the pudding smoother.
In a big pot put the milk, coconut milk, mandarin and lemon peel, the vanilla pod and the cinnamon sticks. At medium-low heat bring to boil and add the rice.
Keep slowly boiling for 35 minutes and constantly stirring with a wooden spoon. The rice loves to stick to the pot. In the last 5 minutes add the sugar.
Serve in individual bowls and sprinkle with cinnamon powder to your taste, loads for me.
You can keep it in the fridge for a couple of days. And have it cold or warm.
You’ll be surprise with the quantity of rice pudding you get with just 240 gr. of rice, share it!

What a coincidence : ) I made almost exactly the same milk rice the other day – only difference is I use less sugar and orange instead of mandarins. Great looking rice, very nice photo!
