Another childhood memory. This sponge fingers will make your mornings a bit better. Dip them in your morning coffee or your evening tea.

It takes no time to make them and you only need three basic ingredients, flour, sugar and eggs. They are soft and spongy, not like buiscuits. They will drink your coffee.


  • 3 eggs.
  • 90gr. Plain flour.
  • 75gr. White sugar.
  • A few drops of vanilla essence.
  • A pinch of salt.
  • Icing sugar.


Separate the egg yolks from the whites. Whish the whites with a pinch of salt. Add the sugar and vanilla at the middle of the process and keep whisking until the egg white stands up in well defined peaks.

Mix the egg yolks and add them to the egg whites. Mix with slow movements using a spatula.

Sift the flour and add slowly to the eggs. Mix with the spatula until all ingredients are integrated.

Pre heat the oven to 180 degrees.

Place the dough into a piping bag. Use a 2 cm rounded nozzle. Place on a baking tray covered with baking paper and make small sticks (around 7cm. long).

Sprinkle with icing sugar just before going in the oven. Cook for 12 minutes approx. They should be slightly golden and soft inside.

Let them cool down and enjoy them with a warm Cola Cao (because is better than Nesquik!). If any left, keep them in box. They will last 2-3 days in perfect condition.
