More rice coming! Now in a sweet cake…

  • 600ml Whole Milk.
  • 60gr. Bomba or Risotto Rice.
  • 115gr. White Sugar.
  • 80gr. Butter.
  • Peel of half orange.
  • Zest from half orange.
  • 2 Egg Whites.
  • 2 Egg Yolks.
  • 1 table spoon orange juice.
  • 1 table spoon dark Rum.
  • 1 table spoon Vanilla extract.


Put the milk with the orange peel in a pot and bring to boil. At boiling point, reduce the heat and add the rice. Cook for 10 minutes. Add the butter, sugar and vanilla extract. Cook for 7 minutes.

Put the rice in an oven tray and let it cool down for 1 hour. Discard the orange peel.

Mix the rice with the egg yolks, orange zest, orange juice and Rum.

Pre heat the oven at 180 degrees.

Whisk the egg whites with a pinch of salt until they form hard peaks.

Add the egg white to the rice. Mix with slow movements.

Place in cake tin and bake for 25 minutes. Let it cool down completely.

Sprinkle with icing sugar and serve with Raspberry Jam. Get a bottle of Port.
