Simple, tasty and cheap. I love onion omelettes, the texture and the sweet taste.

Put it in a tupper and bring it with you the next walk in the mountains. A perfect brunch.


  • 600gr. Onions.
  • 6 Eggs.
  • Balsamic Vinegar.
  • Brown Sugar.
  • Olive Oil.


Finely chop the onions. Put them in a sauce pan with a bit of Olive Oil. Cook at low heat for 25 minutes. Add a few drops of Balsamic Vinegar, a brown sugar tea spoon and salt. Cook for 10 more minutes.

Whisk the eggs with a bit of salt. In a clean sauce pan(I used a 18cm diameter) , add a table spoon of Olive Oil. Add the onions, stir for a minute. Add the eggs. Cook until the omelette is solid enough to turn around.
