I love a good Guacamole. Sadly it is not easy to find good ones and I don’t understand why.

Simplicity is the key (and good ingredients). There is no need to add weird sauces. Please.

Served on a toasted Ciabatta with anchovies, herrings or tuna belly in olive oil…a delicacy.

Ingredients

  • 2 Ripped Avocados.
  • 1 Big Ripped Tomato.
  • 4 Spring Onions.
  • A bunch of Coriander.
  • 1 Lemon and 1 Lime.
  • Half Green Chilli.
  • Rock Salt.
  • A bit of Olive Oil.

Preparation

Peel the Avocados and remove the stones. Smash the avocado with a fork.

Squeeze the tomato to remove some of the water and seeds. Finely chop the tomato.

Finely chop the spring onions, green chilli and coriander.

Mix all ingredients together. Add the salt, juice from lime and lemon and olive oil.

Serve it on a toasted Ciabatta slice. As topping, a few delicious suggestions: salty anchovies, mussels in “escabeche”, pickled herrings or tuna belly in olive oil.

*It will last 2-3 days in the fridge if you cover it with a bit of olive oil and cling film.
