Biscottis are just double baked bread. They are quite healthy as there is almost no oil or butter on them. They last for weeks and you can play around with different ingredients. All advantages.

They are very nice if you dip them in your coffee. I already have 7 or 8 of them…

Ingredients

  • 270gr. Plain Flour.
  • 180gr. White Sugar.
  • 3 Eggs.
  • 1 Tea spoon Baking Powder.
  • 1 Table spoon Sunflower Oil.
  • 2 Table spoons Orange Blossom Water.
  • 125gr. Peeled Pistachios.
  • 1 Orange zest.
  • A pinch of salt.

Preparation

Mix in a bowl the flour, baking powder and salt.

Put in a bowl the eggs and sugar. Whisk for 4 minutes, until they catch some volume. Keep whisking while you add the sunflower oil, Orange Blossom water, orange zest.

Pre heat the oven at 180 degrees.

Add the flour to the bowls with the eggs. Mix until you get a smooth dough.

Put some flour in a flat surface. Divide the dough in two pieces. Form two loaves(10cm width, 3-3 cm thick). Sprinkle some sugar on top. Place them on a baking tray with baking paper.

Bake them for 25 minutes. Place them on a rack and let them cool down for 15 minutes. Slice both loaves with a sharp knife.

Put the slices on a oven rack. Bake for 7 minutes, turn around and another 7 minutes.

Let them cool down completely and keep in a tin. They will last in perfect condition for 2-3 weeks.

Dip your Biscotti in your coffee, milk or hot chocolate. Just delicious.
