I really enjoy a good potato pie. My favourite is still the Tartiflette, specially after a good day of skiing. Or a good Shepherd’s Pie. Can’t decide.

This one is a “healthier” version but very, very tasty…


  • 1 Sheet Puff Pastry.
  • 200gr. Courgettes (Cut in slices).
  • 250gr. Potatoes (Cut in slices).
  • 1 Big Onion.
  • 1 Red Pepper.
  • 4 Eggs.
  • 200ml. Cream.
  • A few Cherry Tomatoes.
  • Parmesan Cheese.
  • Olive Oil.
  • Salt and Pepper.


Pre heat the oven at 180 degrees.

Place the Puff Pastry sheet on a rounded baking tin. Fill the tin with baking beans or dry chickpeas. Bake for 15 minutes. Let it cool down and remove the beans. Reserve.

In a pot with salty boiling water, put the Courgettes for 4 minutes. Wash with cold water and drain. Reserve. Repeat the same process with the potatoes and reserve.

In a sauce with a bit of olive oil, fry the chopped onion for 7 minutes. Add the chopped red pepper and fry for another 7 minutes. Season and reserve.

Whisk the eggs. Season. Add the cream an mix well.

Put all the ingredients(except the tomatoes and Parmesan) in a bowl. Mix carefully. Put this mix in the baking tin with the Puff Pastry.

Decorate with cherry tomatoes halves. Sprinkle some grated Parmesan cheese,

Baked for 60 minutes. Turn off the oven and let it rest 5 minutes in the oven. Place it on a rack and let it cool down.

Serve warm with…today, with a lovely Kielbasa Zagrody (very nice Polish sausage).
