I have to say this is the nicest salad I have tried in a long time. I had it first, a while ago, in Avoca.
I know it sounds a bit strange but try it and you will fall in love with this salad. It is perfect for summer. Healthy and fresh.
- 500gr. Cooked Chickpeas.
- 1 Ripe Mango.
- 2 Bananas.
- 20gr. Sultanas.
For the dressing:
- A small onion.
- 3 Garlic Cloves.
- 1 Red Chilli.
- Half tea spoon Black Onion Seeds.
- A pinch Chilli Powder.
- Juice of 2 Lemons.
- A bunch of fresh Coriander.
- 100ml. Extra Virgin Olive Oil.
Finely chop the onion, garlic and chilli.
In a pan, at medium heat, cook the onion for 10 minutes. Add the garlic, chilli, chilli powder and Black Onion Seeds. Cook for 3 more minutes. Set aside and let it cool down.
Slice the bananas and chop the mango in cubes. Put them in a salad bowl with the chickpeas.
Finely chop the coriander and add it, together with the lemon juice, to the pan. Mix well.
Add the dressing to the salad, season, taste and serve!
