With this weather I feel more into stews than salads. But following the body biological calendar I have to go for a salad. And it is a very, very easy one. And healthy too.
You can use any pasta but Orzo has something special.
I used the ingredients I had handy at home. You can play around with you favourite ones. Anchovies, prawns, mangoes…
And the music. And “old” song from my teenage years. Mmm Mmm Mmm Mmm by Crash Test Dummies.
Ingredients
- 250gr. Orzo pasta.
- A small jar of Artichokes in Olive Oil.
- 10 Sun Dried Tomatoes.
- 1 Jar Pitted Black Olives.
- Half Cucumber.
- 1 small Red Onion.
- 150gr. Feta Cheese.
- Black Pepper.
- Oregano.
- Extra Virgin Olive Oil.
- Balsamic Vinegar.
- Salt.
Preparation
Boil the pasta “al dente” and rinse under cold water.
Just chop the rest of ingredients, except the olives, in small cubes. Mixed all together. Season and add oregano, olive oil and vinegar to your taste.
