A different use for rice. I used the ingredients I had handy at home but you can play around: asparagus, artichokes, mushrooms, prawns, roasted peppers…

It goes very well as a side for meats…Pork Skewers maybe?

  • 300gr. Arborio Rice.
  • 3 Eggs.
  • 5 Table spoons Whole Milk.
  • 5 Table spoons Cream.
  • 60gr. Grated Parmesan Cheese.
  • 50gr. Melted Butter.
  • 30gr. Dried Boletus.
  • 80gr. Pitted Black Olives.
  • Salt.
  • Black Pepper.


Put the dried Boletus in a bowl with fresh water for 30 minutes. Chop the black olives in halves.

Cook the rice in salty boiling water for approx. 20 minutes. Drain and reserve.

Pre heat the oven at 160 degrees.

In a bowl, mix the eggs. Add the milk, cream, melted butter and Parmesan. Mix well.

Drain the Boletus and add the to the bowl with the black olives and rice. Mix well and season.

Spread some butter in a loaf baking tin. Transfer the rice mix to the tin and bake for 25 minutes. Let it cool down for 15 minutes. Remove from the baking tin and serve cut in slices.
