Going through the kitchen cabinets at home I spotted a couple of packages of oats. I like my porridge in the morning but it is going in seasons. I go mad for a week and I stock up for a month and then I get bored.
Let’s find a new life to those poor porridge oats hiding in the kitchen.
Mornings are definitely better with your own Granola!

Ingredients
- 3 Cups of Oats.
- 1 Cup with a mix of your favorite nuts: walnuts, sunflower seeds, linseed, almonds…
- 1 Cup with a mix of sultanas, prunes, dates, figs…
- 1/4 Cup of Honey.
- 1/4 Cup Maple Syrup.
- A tea spoon of Cinnamon powder.
- 1 Table spoon sunflower oil + 1 table spoon apple juice.
- A pinch of salt.
Preparation
Preheat the oven at 160 degrees.
Mix in a bowl all the ingredients except the Maple Syrup and the dried fruit. Mix well and place in a baking tray with baking paper.
Total baking time is 25-30 minutes. Every 7-8 turn around the granola with a spatula to make sure all become golden and crusty.
After 20 minutes, add the Maple Syrup and dried fruits. Mix well and bake another 5-10 minutes.
Let it cool down completely and keep in a closed container.
I eat a lot of granola but haven’t made it in a while … your recipe will inspire me to bake some again!

Granola or muesli was one of the first things we made in high school cooking class. I never made it again to be honest! I love the name Echo & The Bunnymen. Must check it out.
I well remember Echo & the Bunnymen from way back. Back when we started making our own muesli. About 20 years ago.

Can’t wait to make this. I have been eyeing “granola nuts” on Smitten Kitchen too…thinking maybe I’ll mix the two recipes together. And in general, I LOVE the recipe plus music title format. Cooking and music are made for each other! Kinda like hiking and eating. Good stuff.
