Oranges are in season and as a good Spanish I devour them through the winter. But not only as dessert, they can go in salads and soups.

This soup will help you through the winter, full of vitamins and iron. And is also a good looking dish…

Granola

Going through the kitchen cabinets at home I spotted a couple of packages of oats. I like my porridge in the morning but it is going in seasons. I go mad for a week and I stock up for a month and then I get bored.

Let’s find a new life to those poor porridge oats hiding in the kitchen.

Mornings are definitely better with your own Granola!

Together with the cockles Empanada this is my favorite. I am mad about Salty Cod. It has a beautiful flavour and texture. Very different to the fresh one.

And this Empanada…with the raising contrast…and the Pimenton touch… And it gets better the next day when the pastry has absorbed all the flavours.

Enjoy it with a cold Albariño.

Olives, Capers and Tuna Empanadillas + Pearl Jam

Empanadillas are the smaller version of Empanadas. They admit almost any filling so there are a good solution to get rid of leftovers.

I like the exotic touch of Fennel seeds on these ones.

The pastry is quite easy to make and I don’t recommend you to use puff pastry or shortcrust…it is not the same. You could also use butter instead of Olive Oil, the same pastry used for the Torta Pascualina.

If you have any extravagant ideas for Empanadillas fillings please let me know. I will be happy to try them!

After the Red Grape Fruit Tarte Tatin I made last week I was anxious to try a savory one. And now I am not sure which one is better.

The tomato one just melts in your mouth. It is not properly savory, I would say is sweet, bit bitter and savory. And buttery too. Delicious.

Patatas Bravas are a lovely and simple dish. It is usually served as a Tapa, and free in many places when you get a beer.

The secret is the sauce and crispy potatoes. I have to say I am very proud of my sauce, it transported me to a Madrid bar with the first bite.

And with a very Spanish dish is coming a very Spanish musician, and one of the greatest guitarists: Paco de Lucia playing Entre Dos Aguas

A very typical Spanish dish. Tortilla de Patata. And full of controversy. In Spain we are divided about everything. Onion or not onion in the Tortilla. I like both.

This is a different way of presenting it with the sweet pepper flavour as a plus. Can be served as Tapas or as main course is you use bigger peppers.

*Try adding a bit of Chorizo to the potato/egg mix.

I haven’t eaten Endives in a good while. I wanted something different to the classic Endives with Roquefort. This came up. And it was good.

I tried this recipe a couple of years ago in Logroño. I liked its simplicity and freshness, specially after a good few glasses of wine.

If you go to Logroño, you can’t miss the area called Calle Laurel. A paradise for wine and tapas lovers.

Today’s song is from Seasick Steve. A great artist who gives everything on the stage. I met him a couple of years ago and we had a very funny conversation.
