Chocolate and Cream Petit Choux + Massive Attack

I always thought Petit Choux (or Profiteroles) were a complicated pastry. Just a myth. It is a nice dough to work with and the result is just delicious…can’t stop eating them!

For the piping bag, a little trick: To fill it in a clean way place the bag inside a tall cup or glass. Fold the excess bag that doesn’t fit inside the cup over the edges of the cup. Spoon the dough inside the bag. Remove the bag from the cup and squeeze any air bubbles out of the bag. Twist the top part of the bag and proceed with piping.

CondensedCake

After a period of Granola for breakfast I had to move on. It is cake time to go with my first coffee in the morning.

This one is a sweet cake but not too much as it compensates with the olive oil bitterness.  It makes you think there is some kind of liquor in it. It is just the olive oil magic…

I am not very good using yeast. Fermentation at home is a challenge, specially in winter. But I found a room upstairs with a constant warm temperature and my breads are now rising properly.

This one is just delicious and  the nutmeg touch combines very well. It looks more complicated than it really is. give it a try and enjoy the process…and the result.

After the Red Grape Fruit Tarte Tatin I made last week I was anxious to try a savory one. And now I am not sure which one is better.

The tomato one just melts in your mouth. It is not properly savory, I would say is sweet, bit bitter and savory. And buttery too. Delicious.

Torta Pascualina + Frank Sinatra

Torta Pascualina is an Argentinian recipe coming from Italy, from the Liguria region. There are many variations. Some add olive oil to the dough instead of butter, chard is also used and some others add Parmesan.

In this one I add pine nuts to give a bit of crunchiness  to the texture and it worked well. I couldn’t find chard but I will add it next time. I also modified the dough quantities so you won’t have the problem I had with the top not covering completely the tarte.

It is also delicious the next day as a side with nice fillet steak topped with Foie Gras and Maldon Salt.

And…another cake. I don’t understand how I don’t weigh 100 kilos with all the cakes we are eating at home. I am lucky.

This one has a very nice combination of the caramel sweetness and the grapefruit bitterness. Delicious with a good coffee!

If you don’t like grapefruit you can play around with almost any fruit. Just follow the same procedure.

I see recipes with pumpkin everywhere these days. Why not give it a try?

And it was a good decision. My morning improved.

It is an easy cake but surprisingly good. Moist and with different textures. Definitely this cake will visit us again soon.

A different use for rice. I used the ingredients I had handy at home but you can play around: asparagus, artichokes, mushrooms, prawns, roasted peppers…

It goes very well as a side for meats…Pork Skewers maybe?

I am seriously back into running and I am craving for sweets the whole day. So back into the cakes!

This cake comes from south Asia, common in Malaysia and Indonesia.The texture has something special, let’s say is spongy-jelly. A lovely toasty-caramel taste and the ant’s nest  look will do the rest. A lovely cake.

Enjoy it with a good coffee!
