Polloen Mole

I felt in love with mole when I was in Mexico a couple of years ago. I can still remember one I had in Valle de Bravo sharing table with the lads working in the stables at the Spanish Breed National Championship. Good food, good people.

This is  an easy and quick version of Mole. I know it is not the official version, if there is one. But you will have a delicious Mole at home in just a few minutes.

Rabbit in Escabeche + Fatboy Slim

ConejoEscabeche

Escabeche (Pickled) is a traditional way of preserving food in Spain. This technique can be used for meats and fish. And not only preserves food, it also gives a beautiful combination of flavours to the meat.

Back at home, it was great to open the fridge and find  those Trouts in Escabeche or Quails in Escabeche… Here in Dublin, I made before chicken and salmon in Escabeche and the result is always impressive. It is easy, healthy and handy as it last in perfect conditions in the fridge for more than a week.

Chicken Drumsticks in Wine and Garlic Sauce + Ben Harper

A very easy recipe that bring me back home. Always surprise me what you can get with 3 basic ingredients (chicken, garlic and white wine) and a very little effort…grandmother’s secrets.

The only trick here is to get the right sauce thickness and cook the chicken until the meat almost fall apart from the bone.

Lovely if you have it with home made fries and a free range egg fried in very hot olive oil(with some Maldon Salt). Or with fried rice with crispy onion, sultanas and pine nuts.

Beef Stew with a Mexican touch + Fatoumata Diawara

It has been a while since I posted my last recipe. And I miss it.

We had visitors at home for the whole summer and I have been running like mad in the last month(200km in 4 weeks). There was very little time for cooking.

I also worked again in Electricpicnic and I met great musicians and people. I had a great time chatting with the guys from Staff Benda Bilili  and Fatoumata Diawara. Both will be touring in the States so if you are there I will highly recommend you to go to their shows.

Autumn is coming to Ireland and stews too. This is a very basic Spanish stew, I had it back home many times. But I like the Chipotle and chocolate touch. They improve both flavour and texture. And make you feel warm…even more with a glass of wine.

Seafood Paella with Fregola Sarda + Pulp

It seems that I completely abandoned my blog. But it has been in my mind every day. The last few weeks had been very busy between painting in the house and family and friends visits. I was cooking, but mainly dishes already in the blog or basic salads to feed big numbers…

Visitors will be around for a good while and the second round of painting is due to start next week. I won’t be very regular posting in the next few weeks but I will try to be better.

Today, a different Paella. Simple but full of flavour. I don’t like to add too many ingredients, quality Vs. quantity. And the Fregola, what a discovery! It retains better the flavours than the rice and has a lovely texture. If you try it you will repeat.

And the music, Common People by Pulp. I was lucky to see them last year and they are brilliant in concert.

I love the combination of black pudding with fruit, beautiful with Quince. This time with pear, and in a quiche. For mine I used Iberico pork Morcilla but Irish Black Pudding or any other will perfectly work.

I will be away for 2 weeks enjoying the sun, so you won’t see me around here. I will be hiding in the mountains and internet there is not an option. See you soon!

I love Rabbit. Much more than chicken. Firmer texture and more flavour, specially wild ones. It is a very popular meat in Spain and  easy to find in Ireland.

I tried in many different ways but this one is the best by far. If you try it once, you’ll come back to it. The mixture of flavours from the spices is just perfect.  And if you don’t like rabbit, try with chicken.

*If you travel to Spain, try Rice with Hare cooked in an open fire. Just delicious.
