Let’s go with a very, very easy recipe that can make that hour before work a bit better.
A good coffee, a toasted slice of Banana bread and ready for the day!

Ingredients
- 225g Plain Flour.
- 1 Teaspoon Baking Powder.
- 1 Teaspoon Ground Cinnamon.
- 1 Teaspoon salt.
- 110g Caster Sugar.
- 1 Egg beaten.
- 75ml Sunflower oil.
- A few drops of Vanilla Essence.
- 65g Pecan nuts.
- 4 Ripe bananas mashed.
Preparation
Preheat the oven at 175 degrees.
Sift the flour, salt, baking powder and cinnamon into a bowl. Add the sugar and stir.
Mix in the egg , sunflower oil and vanilla essence. Using a fork, add in the pecans and mashed bananas.
Transfer to a loaf tin and bake for 50-60 mins.
Let it cool down on a rack and enjoy it!
I love banana bread. My grandmother used to make it for me when I was young. I still have her recipe.
It’s been a recent discovery for me. It is not a popular cake in Spain. I have to try it with bananas from the Canary Islands…

My Mimi used to make this for me for every occasion. One year, I hadn’t seen her in a while, and she had four loaves ready for me. “Happy Birthday. Merry Christmas. Happy New Year. And Happy Valentines” she said. I ate three of them on the car ride home to Dallas.
I have her recipe, but I don’t make it because I’m afraid of screwing it up. It won’t be as good without the love she put in it. I should try your recipe instead.

So, i did a search for acorn recipes. I have some, but can use more. I was surprised that many things came up and none had acorns. Well, I didn’t review all of them. Do any contain actual acorns? If not, what is meant by acorn in my kitchen? Thank you.

In Spain, we fed the Iberico pigs with acorns. And that is how you get the best cured ham in the world. I don’t know any recipe with acorns. I tried them raw, they are sweet but not the nicest thing. The Acorn was the name of a food business we had for a while, that is where the name of the blog is coming from.
Oh interesting on the ham. What I do know of acorns, is they make a very tasty and exceptionally nutritious flour or coarsely ground substance for making breads, etc. Google to learn more.
