After a period of Granola for breakfast I had to move on. It is cake time to go with my first coffee in the morning.
This one is a sweet cake but not too much as it compensates with the olive oil bitterness. It makes you think there is some kind of liquor in it. It is just the olive oil magic…
Music: Enjoy the Silence by Depeche Mode.
Ingredients
- 250gr. Plain Flour.
- 3 Eggs.
- 1 Natural Yoghurt (125gr.).
- 220gr. Condensed Milk.
- 100gr. of a good quality Extra Virgin Olive Oil.
- 2 Table spoons Cocoa powder.
- 1 Tea spoon Vanilla extract.
- 8gr. Baking Powder.
- A pinch of salt.
Preparation
Pre heat the oven at 175 degrees.
Put the eggs in a bowl and whisk with the hand mixer for 3 minutes.
Add to the bowl the condensed milk, yoghurt, olive oil and vanilla extract. Whisk 2 more minutes.
Add to the bowl the flour(previously mixed with the baking powder and salt) and mix with the hand mixer until becomes smooth.
Now, divide the mix in two and place them in two bowls. Add the cocoa to one of them and mix well.
Alternate one layer of the mix without the cocoa with another with cocoa. Finally make a zigzag with a stick from one side to the other of the baking tin.
Bake for 35-40 minutes.
Let it cool down and enjoy!

Wow, this cake looks amazing! I’ve never eaten olive oil cake before, other than using olive oil in a carrot cake… but I keep reading about how beautiful it is (and olive oil ice cream! Yum!).
