A very easy recipe that bring me back home. Always surprise me what you can get with 3 basic ingredients (chicken, garlic and white wine) and a very little effort…grandmother’s secrets.
The only trick here is to get the right sauce thickness and cook the chicken until the meat almost fall apart from the bone.
Lovely if you have it with home made fries and a free range egg fried in very hot olive oil(with some Maldon Salt). Or with fried rice with crispy onion, sultanas and pine nuts.

Ingredients
- 8 Chicken Drumsticks.
- 600ml. White Wine.
- 1 Table spoon Black Peppercorns.
- 10 Peeled Garlic Cloves.
- 1 Bay Leaf.
- Plain Flour.
- Extra Virgin Olive Oil.
- Salt.
Preparation
Remove the all the skin from the drumsticks. Season and batter in flour.
Put in a casserole 8-10 table spoons of Olive Oil. At medium/high heat fry the drumsticks until golden. Reserve in a plate.
In the same casserole and olive oil fry the garlic cloves until golden. Add the drumsticks, the white wine, bay leaf and peppercorns. Reduce the heat to medium/low. Cover with a lid and cook for 40 minutes shaking the casserole a few times.
As the wine evaporates the sauce will become thicker. If after 30 minutes the sauce is too liquid, remove the lid and cook a few more minutes.
Serve with home made fries. And have bread beside you, the sauce is asking for it!
