I like to add different vegetables to my cakes. Sometimes ends up in disaster. But this one, a winner!
Courgettes don’t add too much flavour but give the cake the perfect moisture and a spongy texture.
As today is an even sunnier day in Dublin, another good song to go cheer you up even more. It is a classic, Suspicious Mind from Elvis Presley.
- 220gr. Plain Flour.
- 200gr. White Sugar.
- 3 Eggs.
- 110ml. Sunflower Oil.
- 180gr. Courgette.
- 40gr. fresh Ginger.
- 1 Table spoon Ground Cinnamon.
- 2 Tea spoons Baking Powder.
- A pinch of salt.
Wash the Courgette, grate it with the skin and reserve. Peel the Ginger, grate it and reserve.
Pre heat the oven at 180 degrees.
Put in a bowl the dry ingredients: flour, baking powder, Cinnamon and salt.
In another bowl, pt the eggs and sugar. Whisk until they double their volume. Start adding the sunflower oil while whisking. Add the Ginger and mix.
Slowly add the flour to the eggs bowl and mix until all ingredients are integrated. Add the grated Courgettes and mix.
Spread some butter on a cake tin and sprinkle some flour. Pour the mix in the tin and bake for 35-40 minutes.
Let it cool down on a rack and enjoy this lovely cake!
