I tried this recipe a couple of years ago in Logroño. I liked its simplicity and freshness, specially after a good few glasses of wine.

Today’s song is from Seasick Steve. A great artist who gives everything on the stage. I met him a couple of years ago and we had a very funny conversation.
- 6 Leeks.
- 1 Small Red Onion.
- A few Gherkins.
- 5 Sun Dried Tomatoes.
- Half Red Pepper.
- 1 Boiled Egg.
- Extra Virgin Olive Oil.
- White Wine Vinegar.
Wash the leeks. Cut the leaves and roots. Remove the outer layer. Cut them in 5-6cm pieces. Boil them for 25 minutes in salty water. Rinse under cold water and reserve.
Finely chop the onion, gherkins sun dried tomatoes, red pepper and boiled egg. Mix in a bowl. Add olive oil and white wine vinegar. Season and mix well. The Vinaigrette improves if you keep it in the fridge for at least an hour.
To serve, just put the leeks in a plate and add the vinaigrette on top.
