A different way to have Sole. Fresh and simple.
This song Come Sing Me a Happy Song… by Bert Jansch is a recent discovery. It is part of The Squid and the Whale, a great movie you can’t miss.
Ingredients
- 2 Soles.
- 2 Oranges.
- White Sugar.
- Extra Virgin Olive Oil.
- Salt.
Preparation
Cut off top and bottom of orange. Setting orange on one of its cut sides on your work surface, slice off peel in strips, letting knife follow the curve of the fruit. Cut orange crosswise into 8 slices.
Put a pan at medium-high heat and add 3 table spoons of white sugar. Add the orange slices. Cook until syrup reduces. Reserve.
Put a bit of olive oil in a pan at hight heat. Fry both sides until done.
Put the sole in a plate, caramelised orange on a side. Sprinkle some orange zest. A few drops of Olive Oil. Salt and black pepper.
Enjoy it!

I agree with Villy. Fish matches very well with orange. I love the whole Persian fish stuffed with orange peel, pistachios nuts, saffron and currants. Your recipe is quite easy and the result a refreshing dish.
