I discovered this salad a few years ago. It has a very nice texture and taste. And oranges and garlic combine really, really well.

You will be eating it with your eyes too. Lovely colours!

Ingredients

  • 1 Red Cabbage.
  • 2 Oranges.
  • Juice from half Orange.
  • 2 Garlic Cloves.
  • 1 Red Chilli.
  • 1 Table spoon White Wine Vinegar.
  • 9 Table spoons Extra Virgin Olive Oil.
  • Salt and Black Pepper.

Preparation

Discard the outer leaves from the Cabbage. Cut the Red Cabbage in stripes.

In a sauce pan, put the Olive Oil, sliced Garlic and Chilli. Fry at low heat until they become slightly golden. Remove from the heat and add the Vinegar. Reserve.

Cut off top and bottom of orange. Setting orange on one of its cut sides on your work surface, slice off peel in strips, letting knife follow the curve of the fruit. Cut orange crosswise into 8 slices.

In a pot, bring water and salt to boil. Add the Cabbage and boil just 2 minutes(should be “al dente”). Transfer to a colander and cool down with cold water under the tap. Leave the Cabbage warm.

In a jar with lid, mix the Olive Oil(with the garlic, chilli and vinegar) with 2 tea spoons of orange juice. Add salt and black pepper. Close the lid and shake well.

Put in a bowl the Red Cabbage, Oranges and theĀ vinaigrette. Mix. Season.
