This morning I couldn’t decide tonight’s dinner. Prawn ceviche or a good guacamole with pickled herrings. Another day.

I went half way. A very fresh salmon and avocado tartar.

Ingredients (for 4 people)

  • 300gr. fresh salmon. Without skin and bones.
  • 100gr. smoked salmon.
  • 2 ripped avocados.
  • 30gr. gherkins.
  • 30gr. capers.
  • 5 spring onions.
  • 1 lemon.
  • 8 table spoons of Olive Oil.
  • 1 tea spoon Perrins sauce.
  • Half tea spoon of Tabasco.
  • 1 tea spoon English mustard.
  • 1 table spoon chopped Coriander.
  • Salt and black pepper.


Chop the salmon in small cubes. Chop finely the smoked salmon, gherkins, capers and spring onions. Chop the avocados in small cubes. Mix all together and reserve, with the avocado bones(this prevents the avocado going dark), in the fridge.

In a jar with lid put the olive oil, the lemon juice, mustard, Perrins sauce, Tabasco, salt and pepper.

Before serving, shake the jar with the sauce and mix with the salmon. ┬áServe in plate using a ring, if you don’t have one just make a compact shape using a glass.
